Chicken tenderloins
Jalapeño peppers, seeded and julienned

Wrap chicken tender cross wise around strip of jalapeño pepper. Wrap bacon around that and secure with toothpick. Put on the grill and baste with Sassy Q Sauce!

3 Boneless/Skinless chicken breasts
1 cup of Sassy's BBQ dry rub
2 oz - Toasted Sesame seed oil
1 small can of crushed pineapple, drained
1 ¼ cup of Sassy's Spicy BBQ sauce
2 cups of shredded Mozzarella cheese or a Mexican cheese blend
1 cup shredded sharp cheddar cheese
1 large pizza crust (you can find them already made in the grocery, or you can make your own!)
1 ½ cups grilled/roasted red bell peppers/onions (optional)
1 Tbsp. dried sweet basil flakes

Rinse chicken breasts under cold water and pat dry with paper towel. Tenderize chicken breasts with fork puncturing many holes in both sides. Rub both sides with toasted sesame seed oil and dust generously with dry rub on both sides. Grill over medium hot flame until completely done, (approx. 15 mins.) turning frequently so as not to burn. Look for nice even crossed grill marks throughout. When done, set aside and let cool. Put oven at 400º, rub pizza crust lightly with toasted sesame seed oil from center to edge, place in oven on center rack for approx. 10-mins to crisp. Remove and let cool slightly. Spread spicy BBQ sauce together and spread evenly over pizza crust starting at center and working outward to edges. Evenly sprinkle shredded cheese over entire surface ensuring complete coverage. Slice chicken breasts thinly from end to end, distribute evenly over cheese completely covering entire pizza. Open pineapple and drain completely (try and remove as much juice as possible), sprinkle entire can over surface of pizza evenly covering as much as possible. Thinly slice up roasted red peppers/onions and evenly distribute over pizza, evenly distribute sharp cheddar cheese over entire pizza surface. Place pizza in 400º oven for approx. 10-mins or until cheddar cheese is melted completely. Remove from oven and sprinkle sweet basil over pizza surface evenly. Serve hot and enjoy!

8 frozen  buttermilk breakfast waffles
8 Chicken breast tenderloins (raw)
8 slices sharp cheddar cheese
1 small can sweetened condensed milk
3 oz. buttermilk
½ cup egg beaters
8 oz. Sassy's Mild BBQ sauce
2 Tbsp black pepper
1 Tbsp salt
4 cups multi grain cheerios
4 cups corn flakes
2 cups panko bread crumbs
1 cup toasted slivered almonds

Mix corn flakes and cheerios together in large mixing bowl and using hands, crunch into small breading size mix, add panko, salt, pepper and mix well. In medium size mixing bowl, add buttermilk, condensed milk and egg beaters mix together. Rinse chicken tenders under cold water and pat dry with paper towel. Starting in egg wash, batter back and forth twice between milk/egg wash mixture and cheerios/corn flake mixture, place on wax paper and put in freezer until slightly firm to touch. Deep fry chicken tenders approx. 10-minutes at 450º until golden brown (you can substitute pre-breaded chicken tenders and bake at 425º for 30-mins instead). Cook waffles in toaster until extra golden brown and crunchy. Toast almonds in oven on broil until golden brown (be careful not to burn approx. 3 mins). Place waffles on large cookie sheet approx. 1-inch apart, top with 1-chicken tender cut in half, place 1-slice cheddar cheese over tender, drizzle with 1-oz. Sassy's mild BBQ sauce and place in oven on broil just long enough to melt cheese. Remove and top with toasted almonds.

Serve piping hot and enjoy!

Small portobello mushrooms, or larger if you prefer
1 T mayonnaise
1 T lemon juice
1 t Worcestershire sauce
1 T celery, finely diced
1 T sweet red pepper, finely diced
Jumbo lump crabmeat
Sassy Q Sweet Rub

Preheat oven to 375 degrees, and lightly spray a baking sheet with cooking spray.

Clean the mushrooms and remove the brown gill area (you can brush the inside of mushrooms with a little melted butter or olive oil); combine the first 5 ingredients and add Sassy Q Sweet Rub to taste. Stuff the mushrooms.

Blend all ingredients and stuff mushrooms.

Place stuffed mushrooms on a baking sheet and top with breadcrumbs (I like Panko) and place a small pat of butter on top. Sprinkle Sassy Q Sweet Rub lightly across the top.

Bake for 15-20 minutes.

I love a meaty chili, and this one is a winner!  The Sassy Q Rub is a great substitution for traditional chili spices. This is a recipe that has been a big hit with my family and friends!

2 T olive oil
2 onions, chopped
3 cloves minced garlic
1 lb ground beef
1 lb beef sirloin, cubed
1 - 14.5 oz can peeled and diced tomatoes with juice
3.5 T Sassy Q Sweet Rub
2 - 3 T chili powder
12 oz bottle dark beer
1 cup strong brewed coffee
1 or 2 cans tomato paste, 6 oz
1 can of beef stock
1 T unsweetened cocoa
1 t salt
1 cup Sassy Q Spicy Sauce
4 cans kidney beans, drained
1 stick of butter

Put the oil in a skillet and brown next 4 ingredients; then drain. Add the rest of ingredients in a large pot and blend well; then add skillet ingredients. Let simmer for 2.5 to 3 hours, halfway thru adding the butter in small pieces and stirring until it is absorbed.
